This dish is a whole meal in and of itself! Wonderful tender chicken breasts, pasta, fresh spinach, caramelized Granny Smith apples and walnuts with a Strawberry Glaze. Try it and you'll see what I mean. I recommend fixing it in sections, so that is how I am giving you the recipe.
Chicken:
2 Boneless skinless chicken breasts
2 Tbs. Canola oil
Saute` chicken breasts in oil until golden brown. Remove from skillet
and place in small casserole. Bake in 350 degree for 45 to 50 minutes
or until chicken is thoroughly cooked.
Spinach:
12 ounce package fresh spinach
2 Tbs. butter
Grinding of fresh nutmeg.
Pick over spinach and place in microwave safe bowl with butter
and grinding of nutmeg. Cover with plastic wrap.
Cook in microwave 2 minutes on high
Pasta:
Your choice of pasta cooked according to package directions.
Caramelized Granny Smith Apples with Walnuts:
1 Granny Smith Apple, cut into wedges
2 Tbs. Butter
1/4 cup Dark brown sugar
5-8 Walnut halves
Cut apples in wedges and saute` in butter.
Top with brown sugar. Turn apples to caramelize on both sides, and
add remainder of brown sugar and walnuts.
Glaze:
Strawberry Margarita Jelly, heated
Assembly:
Place cooked pasta on plate next to spinach. Top with
chicken breast. Add caramelized apples and walnuts.
Drizzle Strawberry Margarita Jelly over all of above.
